Brunella was born in a small town called Bibbiano, in the province of Reggio Emilia in the region of Emilia Romagna, in Northern Italy. This is the area of Italy where famous foods and dishes come from: prosciutto di Parma, Parmigiano Reggiano, balsamic vinegar, lasagna, Bolognese sauce, etc. come from. She grew up in a traditional family where cooking and making pasta was an everyday activity.
Brunella came to the United States in 1990 and studied Mesa State College, graduating in 1994 with a Business and Hospitality degree. In 1998, she opened il Bistro Italiano and also met Ron Hall. Ron at the time, was the manager of the Winery restaurant and had been there for 26 years. Brunella and Ron were married in 1999 and Ron joined her at the Bistro in 2000.
Il Bistro Italiano focuses on Italian cuisine with particular emphasis in Northern Italian cuisine. The menu changes with every season and several times within season. From the very beginning, there has been a conscious focus on using as many local ingredients as possible. We work with local farmers and ranchers for produce and meats, but we also use other Colorado foods as much as possible.
Il Bistro's wine list is focused on Italian wines and Colorado wines only. It is extensive and you will find an array of lesser known Italian wines to tickle your palate and interest. We also have a full service bar that features a large number of Italian liqueurs and Colorado distillates.

The Bistro is open for dinner five evenings a week, Tuesday through Saturday. We often have special events at the restaurant such as half-off wine nights, when all of the bottles of wine are 50% off, special regional wine pairing dinners, cooking classes and much more. We also have catering services that span from simple take out family style dinners to complex, off site caterings up to 200 guests.
